The Best Balsamic Vinaigrette in the World – Yoga Retreat Salad Dressing Recipe

Dear salad haters / anyone who wishes to eat more salad, there’s something you need to know:

Homemade salad dressings are everything when it comes to making salad delicious. They are one of the EASIEST things to “cook” (concoct, really), and no store bought dressing will match the flavor gorgeousness of even the most simple shaken jar with three ingredients.

And another thing: a language-loving friend educated me on the fact that “salad” is based on the Latin word “sal”, meaning salt. (Here’s more from wikipedia). Salad, therefore, is a food group that generally features vegetables in a flavorful way. Salt = flavor. Until a few years ago it never occurred to me to add salt to salad. It changes everything.

Usually, a hint of a sweet ingredient (honey, maple syrup, fruit) also entices the tastebuds.

The following 5 ingredient no-cook recipe stems from my own brain (with inspo via Mark Bittman) and does require a blender. I made a blenderful of this salad dressing for my last yoga retreat, and by they time I ate, there was less than a teaspoon left ;). It was a HUGE hit.

THE BEST BALSAMIC VINAIGRETTE IN THE WORLD.

Proportions are approximate – please tinker to your tastes

Olive oil – 1/4 to 1/2 – cup
Balsamic vineager- 3 Tablespoons
Honey – 1-2 Tablespoons
Red Onion – 1/4 onion
Salt – start with a pinch — add to taste
Black pepper to taste

Put it all in a blender. Pour it over vegetables. Feel proud.
